Ingredients:
- Few small chunks of fresh pineapple
- 2-1/2 oz. unsweetened pineapple juice
- 1-1/2 oz. fresh lime juice
- 1 oz. honey mix
- 1-1/2 oz. demerara rum
- 1-1/2 oz. gold puerto rican rum
- 3/4 oz. 151-proof demerara rum
- 3/4 oz. dark Jamaican rum
- 1-1/2 oz. club soda
Garnish:
- A cored pineapple, Cherry
Instructions:
Put everything (EXCEPT SODA) in a blender. Blend without ice until pineapple is liquefied. Add soda. Pour unstrained into a hollowed-out pineapple filled with crushed ice (use a Vacu-Vin pineapple corer). Stir until well chilled before serving. Enjoy!
How to make Honey Mix
Honey syrup is a home-made or commercial preparation that dissolves honey with some proportion of water in order to make the homey easier to work with as a sweetener and flavoring agent. (Undiluted honey tends to be difficult to dissolve at low temperatures and can be messy.)
To Make: combine equal parts (or whatever proportion the recipe specifies) water and honey in a sauce pan on the stove. Heat, stirring, until all the sugar dissolves. (Do not boil.) Cool and bottle. Adding a ounce or so of neutral grain spirits when bottling will help preserve the syrup.
Honey syrup can also be easily infused with botanicals for creative effects!
