Coconut Chocolate Banana Bread
Ingredients:
Dry
- 2 cups all-purpose flour
- ¾ cup sugar
- ¼ teaspoon salt
- ½ shredded or flaked sweetened coconut
Wet
- 2 eggs, beaten
- ½ cup melted butter, cooled
- 1 teaspoon vanilla
- 3 ripe bananas (1½ cups), mashed with fork
- ½ cup chocolate chips
Garnish:
- Butter!
Instructions:
Preheat oven to 350 degrees. Butter and lightly flour bottom and sides of 9x5x3 loaf pan.
Sift together dry ingredients.
In a separate bowl, add eggs and beat. Next, add cooled melted butter and mix then stir in vanilla. Stir in mashed bananas, chocolate chips and coconut. Mix together all ingredients.
Add banana mixture to dry ingredients and stir until combined. Don’t over mix.
Place in loaf pan and bake 55-60 minutes or until toothpick comes out clean when inserted in middle of bread. Let cool 10 minutes and remove from pan.
