Mary Ann’s Famous Coconut Cream Pie Recipe

Ingredients:

Coconut Cream Pie:

Steps:

  1. In the top of the double boiler over simmering water beat the egg yolks and salt.
  2. Add the sugar, milk and Butter
  3. As soon as the bottom pot boils, mix the cornstarch with a small amount of water.
  4. Add to it the egg yolk mixture, a little at a time.
  5. Cook until thick, stirring constantly with a wire whisk.
  6. Add the coconut and the vanilla.
  7. Pour the filling into the baked pie shell.
  8. Beat the egg whites with a small amount of sugar and spread the meringue over the pie.
  9. Sprinkle the coconut on top and toast in the oven.

Serves 8
