Pineapple-Almond Cheese Spread
From the Dole Easy to Elegant Cookbook
Ingredients:
- 2 cans (8 ounces each) Dole crushed pineapple
- 1 package (8 ounces) cream cheese, softened
- 4 cups shredded sharp Cheddar cheese
- 1/2 cup mayonnaise
- 1 tablespoon soy sauce
- 1 cup Dole chopped natural almonds, toasted
- 1/2 cup finely chopped Dole green bell pepper
- 1/4 cup minced greenonion or chives
- Dole celery stalks or assorted breads
Instructions:
Drain pineapple. In large bowl, beat cream cheese until smooth; beat in Cheddar cheese, mayonnaise and soy sauce until smooth. Stire in pineapple, almonds, green pepper and onion. Refrigerate, covered. Use to stuff celery stalks or serve as dip with assorted breads. Serve at room temperature.
